Baked Apple Donuts

Did you think you were in the wrong place?  I have never shared a recipe on the blog before but for some reason I felt an overwhelming need to share this.  


I was craving something sweet the other day and this recipe my mom used to make when I was a kid popped into my head.  Baked Apple Donuts.  I know they don't look like donuts but trust me you won't care once you eat one.  Delicious.  Sounds healthy right, well no.  After you bake them you dip them in butter and cover them with cinnamon and sugar.  

Recipe:

1 1/2 cup flour
3 tsp baking powder
1/2 tsp salt
1/2 tsp nutmeg
1/2 cup sugar
1/3 cup shortening or margarine
1 egg beaten
1/2 cup milk
1/2 cup finely diced apple

Stir dry ingredients, cut in shortening. add in egg and milk then apples.

grease muffin tin and fill cups 2/3's full, bake at 350 for 20-30 min.  makes one dozen.

after baking allow to cool a bit and dip in butter then cinnamon and sugar mixture.  (1/2 cup butter.  mix 1/2 cup sugar with 1 tsp cinnamon) 



The batter is pretty thick, doesn't really poor you gotta scoop it into your muffin tin.



Oh my they are so good I averaged four a day until they were gone.  Hubby is not much into sweets, lucky me.  The outside is so moist and scrumptious.  Sweet without being too sweet.  I could go on and on I think I might just go bake some more. 

True confession time.  I didn't have any milk so I used half heavy cream half water instead and also I didn't have any shortening or margarine so I used butter.  Whatever works right?
